A decision tree has been used to assess the hazard controls at each process step and the results were documented. Critical Limits for CCP were defined in HACCP plans. We had established the monitoring system and the CCP was under control,
Air-dried Green Onion Minced CCP1: raw material receiving: pesticide residues test shows negative and no allergen contaminated. IQC review base declaration from qualified suppliers per batch.
Dehydrated Minced Green Onion CCP2: blanching or disinfection: blanching temp more than 95℃ and duration time 3-10 mins depends on different product; disinfecting concentration of NaClO 200-300 ppm and duration time 7-10 mins. Operators monitor the temp/concentration and time, keep the record once per 30 mins for blanching or once per 15 mins for disinfecting.
CCP3: metal detection: FeΦ≤0.7 mm, SUSΦ≤1.2 mm, non-FeΦ≤0.8 mm. Operators monitor the product passing by metal detectors continuously, and challenge with standards cards before and end of the production and per 2 hours during the production.
